BLACK BEANS PASTE

STEP 1:
Ingredients:

  • 400gr Dried blackbeans

  • 30gr bicarbonate of soda

  • +9kg water

Instructions:

  1. In a big container, leave all to soak all night

  2. Strain and wash beans

STEP 2:

Ingredients:

  • Soak beans (from step 1)

  • 12 garlic cloves

  • 150gr grilled vegetables

Instructions:

  1. Preheat oven at 200°C

  2. Distribute soaked beans in long deep baking trays

  3. Cover with hot water and garlic

  4. Close with 3 layers of foil

  5. Cook at 200°C for 3 hours

  6. Strain and blend with grilled vegetables

STEP 3:

Ingredients:

  • 200ml vegetable oil

  • 650g tomato salsa

  • 20gr garlic powder

  • 70gr salt

  • Blended beans from step 2

Instructions:

  1. In a big deep tray, heat up the oil

  2. Add the tomato salsa and garlic powder. Cook for 10min

  3. Add the blended beans and salt. Cook for 90min, occasionally stirring and scratching the bottom

  4. Distribute in 1kg vaccum bags and leave to cool down

  5. Once at room temperature, vaccum and seal

  6. Label and store in the fridge
