BRAISED CHICKEN

Ingredients:

  • 10kg Chicken thigh, diced

  • 240g Mayan Mix

Instructions:

  1. Preheat the oven at 200°C

  2. Distribute the chicken in 3 cooking trays

  3. Distribute spices evenly among the cooking trays

  4. Cook in the oven 45min at 200°C

  5. Take out of the oven and leave to rest for 10min

  6. Pack in 6 vacuum bags and wait for it to cool off

  7. Once at room temperature, vacuum at 45/7

  8. Label and store in the fridge
