BRAISED CHICKEN
Ingredients:
10kg Chicken thigh, diced
240g Mayan Mix
Instructions:
Preheat the oven at 200°C
Distribute the chicken in 3 cooking trays
Distribute spices evenly among the cooking trays
Cook in the oven 45min at 200°C
Take out of the oven and leave to rest for 10min
Pack in 6 vacuum bags and wait for it to cool off
Once at room temperature, vacuum at 45/7
Label and store in the fridge
