TOMATO SALSA
Ingredients:
5kg tomatoes
1kg red onions
1 ancho chili
1 pasilla chili
90gr salt
4gr black pepper
2L water
Instructions:
Roast tomatoes, red onions and chilis for 10min, both sides
Transfer into a big pot
Top up with salt, black pepper and water
Bring to a boil and reduce to a simmer cook at medium heat for 2h30min.
Blend and pass through colander
Distribute in a plastic boxes
Leave to cool down. Once at room temperature, label and store in the fridge
