TOMATO SALSA

Ingredients:

  • 5kg tomatoes

  • 1kg red onions

  • 1 ancho chili

  • 1 pasilla chili

  • 90gr salt

  • 4gr black pepper

  • 2L water

Instructions:

  1. Roast tomatoes, red onions and chilis for 10min, both sides

  2. Transfer into a big pot

  3. Top up with salt, black pepper and water

  4. Bring to a boil and reduce to a simmer cook at medium heat for 2h30min.

  5. Blend and pass through colander

  6. Distribute in a plastic boxes

  7. Leave to cool down. Once at room temperature, label and store in the fridge
