GREEN SALSA

Ingredients:

  • 2.8kg green tomato can, drained

  • 1 full coriander head

  • 10cl lime juice

  • 30g salt

  • 2cl cider vinegar

  • 2gr black pepper

  • 50gr jalapeños

  • 2gr Xanthan gum

Instructions:

  1. Pour all the ingredients into a blender, reserving the Xanthan gum, and blend

  2. Add the Xanthan gum and blend again

  3. Pack in vacuum bags, label and store in the fridge
