MOLE PASTE
Ingredients:
3 pasilla chile, toasted
2 guajillo chile, toasted
3 chipotle chile, toasted
3 ancho chile, toasted
50g pepitoria
90g peanut butter
30 dry cornflour, toasted
10g garlic powder
5g cumin seeds, toasted
160g dark chocolate
5g thyme
1/2 cinnamon stick
2 cloves
15g dried plantain skin powder
2g salt
Instructions:
Blend all ingredients
Store in an airtight container
