MOLE PASTE

Ingredients:

  • 3 pasilla chile, toasted

  • 2 guajillo chile, toasted

  • 3 chipotle chile, toasted

  • 3 ancho chile, toasted

  • 50g pepitoria

  • 90g peanut butter

  • 30 dry cornflour, toasted

  • 10g garlic powder

  • 5g cumin seeds, toasted

  • 160g dark chocolate

  • 5g thyme

  • 1/2 cinnamon stick

  • 2 cloves

  • 15g dried plantain skin powder

  • 2g salt

Instructions:

  1. Blend all ingredients

  2. Store in an airtight container
