FERMENTED CORN

Ingredients:

  • 340gr corn, strained

  • 1 orange zest and juice

  • 10gr salt

  • 1gr black pepper

  • 1gr ancho chile

Instructions:

  1. Stir all in a container

  2. Distribute in vaccum bags. Vaccum & seal (50/7)

  3. Ferment 2 weeks at 28°C.
