PORK CANITAS

STEP 1:

Ingredients:

  • 230gr salt

  • 4L cold water

  • 4kg pork shoudler

Instructions:

  1. In a big container, dissolve salt in water

  2. Add pork, close container and leave all night in the fridge

STEP 2:

Ingredients:

  • Salted Pork (from Step 1, drained off)

  • 100g achiote paste

  • 2 oranges, sliced

  • 12 garlic cloves, sliced

  • 20gr dried thyme

  • 12 black peppercloves

  • pork fat

Instructions:

  1. Add all the ingredients to a big container

  2. Seal tight (3 times) with foil

  3. Cook in the oven 5 hours at 160°C

  4. Take out from the oven and leave to rest 20min

  5. Strain, separating liquid from pork and seasoning (garlic, achiote, orange etc.)

  6. Slice pork in mouth bite size pics and tear up

  7. Add remeaning garlic and achiote. Squeeze orange over

  8. Distribute in vaccum bags. Once at room temperature, seal and store in the fridge.
